Groundhog Day Cupcakes

Groundhog day is tomorrow and I am hoping for an early spring.  Today certainly felt like a spring day and so I am being hopeful.  For those who don’t know what Groundhog day is Wikipedia tells us “According to folklore, if it is cloudy when a groundhog emerges from its burrow on this day, then spring will come early; if it is sunny, the groundhog will supposedly see its shadow and retreat back into its burrow, and the winter weather will persist for six more weeks”.

So in honor of tomorrow being Groundhog day we thought we would get a little creative in the kitchen today and make an awesome treat for tomorrow. Emma was so excited to help decorate these adorable cupcakes. I baked them while she was at school and we decorated them when she came home.

These cupcakes came out awesome and were so easy to throw together.  Here is what you need to do to make them:

  1. Bake and Cool Cupcakes
  2. Make or use ready made chocolate frosting
  3. Ice the cupcakes with a good amount of frosting
  4. Sprinkle Oreo cookie crumbs on top of the iced cupcakes
  5. Take a Teddy bear shaped cookie (Teddy Grahams will do but I found some store brand ones that were actually slightly bigger then Teddy Grahams and they were what I used) and place it in the middle of the frosted cupcakes so the Teddy Bear is poking half way out.  This makes it look like the Groundhog / Teddy Bear is popping out.

I am pretty sure I will be making these again.  My husband loved them too.   Stay tuned I have another similar Groundhog day dessert for tomorrow that is even quicker to put together.
